Eggplant Seedlings!

Several weeks ago, I sprinkled a few seeds into one of my containers and now I am happy to post a photo of my first eggplant seedlings! IMG_1868 I’ve never grown eggplant before. The variety is called Black Beauty, one of the more popular.

Assuming that I will have two plants, I will transplant one of them into its own container when it’s strong and large enough to do so. This variety of eggplant is supposed to be very productive.

I am always excited by the emergence of seedlings in my garden. I will have to look through my many cookbooks to find recipes for my much-anticipated eggplants!
